To ensure moisture we brine fresh whole chickens for 24 hours then apply a generous coating of dry rub. Then they go in the smoker and cook over all natural lump charcoal and hardwoods. The birds smoke for about five hours then hand pulled. Traditional BBQ at it's Best!
